Kari Ayam (spicy Chicken Satay)

Ingredients

  • 1 kg chicken, cut into bite-sized pieces
  • 5 shallots, finely chopped
  • 4 cloves garlic, minced
  • 2 red chilies, finely chopped
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1 lemongrass stalk, bruised
  • 400 ml coconut milk
  • Salt to taste
  • Wooden skewers, soaked in water

Instructions

  1. In a bowl, combine the shallots, garlic, red chilies, turmeric powder, coriander powder, and cumin powder to make the marinade.
  2. Add the chicken pieces to the marinade and mix well to coat the chicken. Let it marinate for at least 1 hour in the refrigerator.
  3. Thread the marinated chicken pieces onto the soaked wooden skewers.
  4. Heat a grill or stovetop grill pan over medium-high heat. Grill the chicken skewers for about 4-5 minutes on each side, or until fully cooked and slightly charred.
  5. In a separate pot, bring the coconut milk and lemongrass to a simmer. Add the grilled chicken skewers to the coconut milk and let it simmer for 10 minutes.
  6. Season with salt to taste and serve the Kari Ayam hot with steamed rice.
