Kari De Porco Eurasiano (eurasian Pork Curry)

Ingredients

  • 1 kg pork shoulder, cut into cubes
  • 2 onions, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon chili powder
  • 400ml coconut milk
  • 2 potatoes, peeled and cubed
  • Salt and pepper to taste

Instructions

  1. Heat some oil in a large pot over medium heat. Add the onions and garlic, and cook until softened.
  2. Add the pork cubes to the pot and brown them on all sides.
  3. Stir in the curry powder, turmeric, cumin, coriander, and chili powder, coating the pork evenly with the spices.
  4. Pour in the coconut milk and add the cubed potatoes. Season with salt and pepper.
  5. Simmer the curry for 1 hour, or until the pork is tender and the flavors have melded together.
  6. Serve the Kari de Porco Eurasiano hot with steamed rice or crusty bread.
