Ingredients
- 1 kg pork shoulder, cut into cubes
- 2 onions, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons curry powder
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon chili powder
- 400ml coconut milk
- 2 potatoes, peeled and cubed
- Salt and pepper to taste
Instructions
- Heat some oil in a large pot over medium heat. Add the onions and garlic, and cook until softened.
- Add the pork cubes to the pot and brown them on all sides.
- Stir in the curry powder, turmeric, cumin, coriander, and chili powder, coating the pork evenly with the spices.
- Pour in the coconut milk and add the cubed potatoes. Season with salt and pepper.
- Simmer the curry for 1 hour, or until the pork is tender and the flavors have melded together.
- Serve the Kari de Porco Eurasiano hot with steamed rice or crusty bread.
