  • 2 tomatoes, chopped
  • 1 can (400ml) coconut milk
  • 1 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, garlic, and ginger. Sauté until the onions are soft and translucent.
  2. Add the chopped tomatoes and cook until they are soft and have released their juices.
  3. Stir in the curry powder, turmeric, cumin, coriander, and chili powder. Cook for 2-3 minutes to toast the spices.
  4. Pour in the coconut milk and bring the mixture to a simmer.
