Ingredients
- 500g white fish fillets, cut into chunks
- 2 tbsp vegetable oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 2 tomatoes, chopped
- 1 can (400ml) coconut milk
- 1 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp chili powder
- Salt and pepper to taste

Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, garlic, and ginger. Sauté until the onions are soft and translucent.
- Add the chopped tomatoes and cook until they are soft and have released their juices.
- Stir in the curry powder, turmeric, cumin, coriander, and chili powder. Cook for 2-3 minutes to toast the spices.
- Pour in the coconut milk and bring the mixture to a simmer.
- Add the fish chunks to the pot and gently stir to coat them with the curry sauce. Simmer for 15-20 minutes, or until the fish is cooked through.
- Season the curry with salt and pepper to taste.
- Garnish with fresh cilantro before serving.
