Ingredients

  • 1 kg mutton, cut into pieces

  • 3 tomatoes, chopped
  • 2 potatoes, peeled and cubed
  • 1 cup coconut milk
  • 2 tbsp vegetable oil
  • 2 tbsp curry powder
  • 1 tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 cinnamon stick
  • 3 cardamom pods
  • Salt to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the onions, garlic, and ginger. Sauté until the onions are soft and translucent.
  2. Add the mutton pieces to the pot and cook until browned on all sides.
  3. Stir in the curry powder, turmeric powder, cumin powder, and coriander powder. Cook for 2 minutes to toast the spices.
  4. Add the chopped tomatoes, potatoes, cinnamon stick, and cardamom pods. Pour in enough water to cover the mutton.
  5. Bring the curry to a boil, then reduce the heat and let it simmer for 1 hour or until the mutton is tender.
  6. Pour in the coconut milk and simmer for an additional 10 minutes.
  7. Season with salt to taste and serve hot with steamed rice or bread.
