Ingredients
- 500g lamb, cut into cubes
- 2 onions, finely chopped
- 4 garlic cloves, minced
- 2 red chilies, sliced
- 1 inch ginger, grated
- 1 tsp ground turmeric
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp chili powder
- 400ml coconut milk
- 2 tomatoes, diced
- 2 tbsp vegetable oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the onions, garlic, red chilies, and ginger. Sauté until the onions are soft and translucent.
- Add the lamb cubes to the pot and cook until browned on all sides.
- Stir in the ground turmeric, coriander, cumin, and chili powder. Cook for 2 minutes to toast the spices.
- Pour in the coconut milk and add the diced tomatoes. Season with salt and bring to a simmer. Cover and cook for 1 hour, stirring occasionally.
- Once the lamb is tender and the sauce has thickened, remove from heat. Garnish with fresh cilantro before serving.
