Ingredients

  • 500g lamb, cut into cubes
  • 2 onions, finely chopped
  • 4 garlic cloves, minced
  • 2 red chilies, sliced
  • 1 inch ginger, grated
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 400ml coconut milk
  • 2 tomatoes, diced
  • 2 tbsp vegetable oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the onions, garlic, red chilies, and ginger. Sauté until the onions are soft and translucent.
  2. Add the lamb cubes to the pot and cook until browned on all sides.
  3. Stir in the ground turmeric, coriander, cumin, and chili powder. Cook for 2 minutes to toast the spices.
  4. Pour in the coconut milk and add the diced tomatoes. Season with salt and bring to a simmer. Cover and cook for 1 hour, stirring occasionally.
  5. Once the lamb is tender and the sauce has thickened, remove from heat. Garnish with fresh cilantro before serving.
