Kari Kari (spicy Sri Lankan Beef Korma)

Ingredients
- 1 lb beef, cut into cubes
- 2 onions, finely chopped
- 3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 2 tomatoes, chopped
- 1/2 cup coconut milk
- 2 tbsp vegetable oil
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1 tsp chili powder
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
- Add the chopped onions and sauté until they turn golden brown.
- Add the minced garlic and grated ginger, and sauté for another 2 minutes.
- Add the beef cubes and brown them on all sides.
- Stir in the coriander powder, turmeric powder, and chili powder. Cook for 2 minutes.
- Add the chopped tomatoes and cook until they turn soft.
- Pour in the coconut milk and season with salt. Cover and simmer for 1 hour or until the beef is tender.
- Garnish with fresh cilantro before serving.
