Kari Kari (spicy Sri Lankan Beef Korma)

Ingredients

  • 1 lb beef, cut into cubes
  • 2 onions, finely chopped
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 2 tomatoes, chopped
  • 1/2 cup coconut milk
  • 2 tbsp vegetable oil
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1 tsp chili powder
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
  2. Add the chopped onions and sauté until they turn golden brown.
  3. Add the minced garlic and grated ginger, and sauté for another 2 minutes.
  4. Add the beef cubes and brown them on all sides.
  5. Stir in the coriander powder, turmeric powder, and chili powder. Cook for 2 minutes.
  6. Add the chopped tomatoes and cook until they turn soft.
  7. Pour in the coconut milk and season with salt. Cover and simmer for 1 hour or until the beef is tender.
  8. Garnish with fresh cilantro before serving.
