Ingredients
- 1 whole chicken, cut into pieces
- 2 potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can coconut milk
- 2 tablespoons curry powder
- 1 tablespoon fish sauce
- 1 tablespoon sugar
- 2 cups chicken broth
- Salt and pepper to taste
Instructions
- In a large pot, heat some oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.
- Add the chicken pieces to the pot and cook until they are browned on all sides.
- Sprinkle the curry powder over the chicken and stir to coat the pieces evenly.
- Pour in the coconut milk and chicken broth. Add the diced potatoes, fish sauce, and sugar. Season with salt and pepper.
- Bring the curry to a boil, then reduce the heat to low and let it simmer for about 45 minutes, or until the chicken is cooked through and the potatoes are tender.
- Adjust the seasoning if needed, and serve the Kari Sach Moan hot with steamed rice.
