Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup butter, chilled and cubed
  • 1/2 cup water
  • 1 tablespoon vegetable oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon red curry paste
  • 1 cup cooked chicken, shredded
  • 1 large potato, diced and boiled
  • Salt to taste
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a large bowl, combine the flour and chilled butter. Use your fingers to rub the butter into the flour until it resembles breadcrumbs.
  2. Add water gradually and mix until a dough forms. Cover and let it rest for 15 minutes.
  3. In a pan, heat vegetable oil and sauté the onion and garlic until fragrant.
  4. Add the red curry paste and cook for 1-2 minutes.
  5. Add the shredded chicken, boiled potato, and salt. Stir to combine and cook for another 5 minutes. Remove from heat and let it cool.
  6. Preheat the oven to 375°F (190°C).
  7. Roll out the dough and cut into circles. Place a spoonful of the chicken filling in the center of each circle.
  8. Brush the edges with beaten egg, fold the dough over the filling to form a half-moon shape, and crimp the edges with a fork to seal.
  9. Place the curry puffs on a baking sheet, brush the tops with beaten egg, and bake for 20-25 minutes or until golden brown.
  10. Remove from the oven and let them cool slightly before serving.
