Karipap Puteh (thai Chicken Curry Puffs)
Karipap Puteh, also known as Thai Chicken Curry Puffs, is a popular snack in Thai cuisine. These delicious and crispy puffs are filled with a flavorful mixture of chicken, potatoes, and aromatic Thai curry spices.
Ingredients
- 2 cups all-purpose flour
- 1/2 cup butter, chilled and cubed
- 1/2 cup water
- 1 tablespoon vegetable oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon red curry paste
- 1 cup cooked chicken, shredded
- 1 large potato, diced and boiled
- Salt to taste
- 1 egg, beaten (for egg wash)
Instructions
- In a large bowl, combine the flour and chilled butter. Use your fingers to rub the butter into the flour until it resembles breadcrumbs.
- Add water gradually and mix until a dough forms. Cover and let it rest for 15 minutes.
- In a pan, heat vegetable oil and sauté the onion and garlic until fragrant.
- Add the red curry paste and cook for 1-2 minutes.
- Add the shredded chicken, boiled potato, and salt. Stir to combine and cook for another 5 minutes. Remove from heat and let it cool.
- Preheat the oven to 375°F (190°C).
- Roll out the dough and cut into circles. Place a spoonful of the chicken filling in the center of each circle.
- Brush the edges with beaten egg, fold the dough over the filling to form a half-moon shape, and crimp the edges with a fork to seal.
- Place the curry puffs on a baking sheet, brush the tops with beaten egg, and bake for 20-25 minutes or until golden brown.
- Remove from the oven and let them cool slightly before serving.
