Karjalanpiirakka (karelian Pie)
Karjalanpiirakka, also known as Karelian Pie, is a traditional Finnish pastry filled with rice porridge or mashed potatoes. It is a popular snack or light meal in Finland, often served with egg butter.
Ingredients
- 3 cups rye flour
- 1 cup water
- 1 cup rice porridge or mashed potatoes
- 1/2 cup butter
- Salt to taste
Instructions
- Mix rye flour and water to form a dough. Let it rest for 30 minutes.
- Roll out the dough and cut into small circles.
- Place a spoonful of rice porridge or mashed potatoes in the center of each circle.
- Pinch the edges to create a crimped border.
- Bake in a preheated oven at 220°C (425°F) for 15-20 minutes, or until golden brown.
- Brush the pies with melted butter and sprinkle with salt.
