Karjalanpiirakka, also known as Karelian Pie, is a traditional Finnish pastry filled with rice porridge or mashed potatoes. It is a popular snack or light meal in Finland, often served with egg butter.

Ingredients

  • 3 cups rye flour
  • 1 cup water
  • 1 cup rice porridge or mashed potatoes
  • 1/2 cup butter
  • Salt to taste

Instructions

  1. Mix rye flour and water to form a dough. Let it rest for 30 minutes.
  2. Roll out the dough and cut into small circles.
  3. Place a spoonful of rice porridge or mashed potatoes in the center of each circle.
  4. Pinch the edges to create a crimped border.
  5. Bake in a preheated oven at 220°C (425°F) for 15-20 minutes, or until golden brown.
  6. Brush the pies with melted butter and sprinkle with salt.
