Ingredients
- 4 large potatoes, peeled and diced
- 1 onion, finely chopped
- 2 cups mushrooms, sliced
- 1 cup vegetable broth

Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the mushrooms to the skillet and cook until they release their moisture and become golden brown.
