Ingredients

  • 1 onion, sliced
  • 3 garlic cloves, minced
  • 2 tbsp olive oil

  • 1 tsp dried rosemary

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the potatoes, carrots, bell peppers, zucchini, onion, and garlic with olive oil, thyme, rosemary, salt, and pepper.
  3. Spread the vegetables in a single layer on a baking sheet and roast for 40-45 minutes, or until the vegetables are tender and golden brown.
