Kasha Koncoction
Kasha Koncoction is a traditional Ukrainian dish made with buckwheat groats and a variety of flavorful ingredients. This hearty and nutritious meal is perfect for a cozy family dinner or a special gathering.
Ingredients
- 2 cups buckwheat groats
- 4 cups vegetable broth
- 1 onion, finely chopped
- 2 carrots, grated
- 1 bell pepper, diced
- 1/2 cup mushrooms, sliced
- 2 cloves garlic, minced
- 1/4 cup tomato paste
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- Rinse the buckwheat groats under cold water and drain.
- In a large pot, heat the vegetable oil over medium heat. Add the onion, carrots, bell pepper, and mushrooms. Cook until the vegetables are tender.
- Add the garlic, tomato paste, and paprika. Stir to combine.
- Add the buckwheat groats and vegetable broth. Season with salt and pepper. Bring to a boil, then reduce heat to low. Cover and simmer for 20-25 minutes, or until the groats are tender and the liquid is absorbed.
- Fluff the kasha with a fork and serve hot.
