Kashmiri Chicken Curry (कश्मीरी चिकन करी)
Kashmiri Chicken Curry is a traditional dish from the beautiful region of Kashmir, known for its rich and aromatic flavors. This recipe combines tender chicken with a blend of aromatic spices and creamy yogurt to create a delicious and comforting curry.
Ingredients
- 500g chicken, cut into pieces
- 2 onions, finely chopped
- 1 cup yogurt
- 2 tomatoes, pureed
- 2 tsp ginger-garlic paste
- 1 tsp cumin seeds
- 1 cinnamon stick
- 4 green cardamom pods
- 4 cloves
- 1 tsp turmeric powder
- 1 tsp Kashmiri red chili powder
- 1 tsp ground fennel seeds
- 1/2 tsp garam masala
- Salt to taste
- 2 tbsp oil
- Fresh coriander leaves for garnish
Instructions
- Heat oil in a pan and add cumin seeds, cinnamon stick, cardamom pods, and cloves. Sauté until fragrant.
- Add chopped onions and sauté until golden brown.
- Stir in ginger-garlic paste and cook for a few minutes.
- Add chicken pieces and cook until they are no longer pink.
- Whisk the yogurt and tomato puree together, then add it to the pan.
- Stir in turmeric, red chili powder, ground fennel seeds, garam masala, and salt. Mix well.
- Cover and simmer for 25-30 minutes until the chicken is cooked through and the curry has thickened.
- Garnish with fresh coriander leaves before serving.
