Kashmiri Chicken Kebab (कश्मीरी चिकन कबाब)

Ingredients
- 500g boneless chicken, cut into cubes
- 1 cup yogurt
- 2 tbsp ginger-garlic paste
- 2 tsp Kashmiri red chili powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- 1/4 tsp turmeric powder
- Salt to taste
- 2 tbsp mustard oil
- 1 lemon, juiced
- 1/4 cup chopped fresh coriander leaves
Instructions
- In a bowl, mix yogurt, ginger-garlic paste, Kashmiri red chili powder, cumin powder, coriander powder, garam masala, turmeric powder, salt, and mustard oil.
- Add the chicken cubes to the marinade and mix well. Cover and refrigerate for at least 2 hours.
- Thread the marinated chicken onto skewers and cook on a hot stovetop grill for 12-15 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
- Remove the kebabs from the grill, drizzle with lemon juice, and garnish with chopped coriander leaves.
- Serve hot with mint chutney and naan or rice.
