Kashmiri Dum Aloo (कश्मीरी दम आलू)
Kashmiri Dum Aloo is a traditional dish from the beautiful region of Kashmir, known for its rich and aromatic flavors. This vegetarian dish features baby potatoes cooked in a flavorful and creamy gravy, making it a perfect addition to any meal.
Ingredients
- 500g baby potatoes, boiled and peeled
- 1 cup yogurt
- 1 tsp ginger paste
- 1 tsp fennel powder
- 1 tsp dry ginger powder
- 1/2 tsp turmeric powder
- 1/2 tsp Kashmiri red chili powder
- 1/2 tsp garam masala
- 2 tbsp ghee (clarified butter)
- 1 bay leaf
- 1 cinnamon stick
- 4-5 green cardamom pods
- 1/2 cup water
- Salt to taste
Instructions
- In a bowl, mix yogurt, ginger paste, fennel powder, dry ginger powder, turmeric powder, Kashmiri red chili powder, and garam masala to make the marinade.
- Pierce the boiled baby potatoes with a fork and marinate them in the yogurt mixture. Let it sit for 15 minutes.
- Heat ghee in a pan and add bay leaf, cinnamon stick, and green cardamom pods. Sauté for a minute.
- Add the marinated potatoes and sauté for 5 minutes.
- Then, add water and salt. Cover the pan with a lid and let it cook on low heat for 20-25 minutes until the potatoes are tender and the gravy thickens.
- Garnish with fresh coriander leaves and serve hot.
