Kashmiri Dum Mushroom Biryani (कश्मीरी दम मशरूम बिरयानी)

Kashmiri Dum Mushroom Biryani is a flavorful and aromatic rice dish from the beautiful Kashmiri cuisine. This vegetarian biryani is made with fragrant basmati rice, earthy mushrooms, and a blend of traditional Kashmiri spices.

Kashmiri Dum Mushroom Biryani (कश्मीरी दम मशरूम बिरयानी)

Ingredients

  • 2 cups basmati rice, soaked for 30 minutes and drained
  • 1 cup button mushrooms, cleaned and sliced
  • 1 large onion, thinly sliced
  • 1/2 cup plain yogurt
  • 1/4 cup ghee (clarified butter)
  • 1 teaspoon cumin seeds
  • 2-3 green cardamom pods
  • 1 cinnamon stick
  • 1 bay leaf
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon Kashmiri red chili powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Fried onions for garnish
  • Fresh cilantro leaves for garnish

Instructions

  1. Heat ghee in a large pot and add cumin seeds, cardamom, cinnamon, and bay leaf. Sauté until fragrant.
  2. Add sliced onions and cook until golden brown.
  3. Stir in ginger-garlic paste, Kashmiri red chili powder, turmeric, and garam masala. Cook for 2 minutes.
  4. Whisk yogurt with salt and add it to the pot. Cook until the ghee separates.
  5. Add sliced mushrooms and cook for 5 minutes.
  6. Layer the soaked rice over the mushroom mixture. Pour 3 cups of water, cover the pot, and cook on low heat for 20 minutes.
  7. Garnish with fried onions and cilantro before serving.
