Kashmiri Dum Mushroom Biryani (कश्मीरी दम मशरूम बिरयानी)
Kashmiri Dum Mushroom Biryani is a flavorful and aromatic rice dish from the beautiful Kashmiri cuisine. This vegetarian biryani is made with fragrant basmati rice, earthy mushrooms, and a blend of traditional Kashmiri spices.
Ingredients
- 2 cups basmati rice, soaked for 30 minutes and drained
- 1 cup button mushrooms, cleaned and sliced
- 1 large onion, thinly sliced
- 1/2 cup plain yogurt
- 1/4 cup ghee (clarified butter)
- 1 teaspoon cumin seeds
- 2-3 green cardamom pods
- 1 cinnamon stick
- 1 bay leaf
- 1 teaspoon ginger-garlic paste
- 1 teaspoon Kashmiri red chili powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon garam masala
- Salt to taste
- Fried onions for garnish
- Fresh cilantro leaves for garnish
Instructions
- Heat ghee in a large pot and add cumin seeds, cardamom, cinnamon, and bay leaf. Sauté until fragrant.
- Add sliced onions and cook until golden brown.
- Stir in ginger-garlic paste, Kashmiri red chili powder, turmeric, and garam masala. Cook for 2 minutes.
- Whisk yogurt with salt and add it to the pot. Cook until the ghee separates.
- Add sliced mushrooms and cook for 5 minutes.
- Layer the soaked rice over the mushroom mixture. Pour 3 cups of water, cover the pot, and cook on low heat for 20 minutes.
- Garnish with fried onions and cilantro before serving.
