Kashmiri Kofta Curry (कश्मीरी कोफ्ता करी)

Ingredients

  • 500g minced mutton
  • 2 onions, finely chopped
  • 1/2 cup yogurt
  • 2 tbsp ginger-garlic paste
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • 1/2 cup cashew nuts, ground into a paste
  • 1/4 cup fresh cream
  • Salt to taste
  • 2 tbsp ghee (clarified butter)
  • Fresh coriander leaves for garnish

Instructions

  1. In a large bowl, mix the minced mutton, half of the chopped onions, ginger-garlic paste, turmeric powder, red chili powder, garam masala, and salt. Shape the mixture into small meatballs.
  2. Heat ghee in a deep pan and fry the remaining chopped onions until golden brown.
  3. Add the yogurt and cashew nut paste to the pan. Cook for a few minutes, stirring constantly.
  4. Add the meatballs to the pan and cook for 10-15 minutes, until they are fully cooked.
  5. Stir in the fresh cream and simmer for another 5 minutes.
  6. Garnish with fresh coriander leaves before serving.
