Kashmiri Kofta Curry (कश्मीरी कोफ्ता करी)
Kashmiri Kofta Curry is a traditional dish from the beautiful region of Kashmir, known for its rich and aromatic flavors. This dish features tender meatballs simmered in a creamy and flavorful curry, making it a perfect choice for a special dinner or gathering.
Ingredients
- 500g minced mutton
- 2 onions, finely chopped
- 1/2 cup yogurt
- 2 tbsp ginger-garlic paste
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp garam masala
- 1/2 cup cashew nuts, ground into a paste
- 1/4 cup fresh cream
- Salt to taste
- 2 tbsp ghee (clarified butter)
- Fresh coriander leaves for garnish
Instructions
- In a large bowl, mix the minced mutton, half of the chopped onions, ginger-garlic paste, turmeric powder, red chili powder, garam masala, and salt. Shape the mixture into small meatballs.
- Heat ghee in a deep pan and fry the remaining chopped onions until golden brown.
- Add the yogurt and cashew nut paste to the pan. Cook for a few minutes, stirring constantly.
- Add the meatballs to the pan and cook for 10-15 minutes, until they are fully cooked.
- Stir in the fresh cream and simmer for another 5 minutes.
- Garnish with fresh coriander leaves before serving.
