Kashmiri Methi Chaman (कश्मीरी मेथी चमन)
Kashmiri Methi Chaman is a traditional dish from the beautiful region of Kashmir, known for its rich and aromatic cuisine. This vegetarian dish is made with paneer (Indian cottage cheese) and fresh fenugreek leaves, cooked in a flavorful and creamy gravy.
Ingredients
- 250g paneer, cubed
- 1 cup fresh fenugreek leaves (methi)
- 1 large onion, finely chopped
- 1 tomato, pureed
- 1/2 cup yogurt
- 1 tsp ginger-garlic paste
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- 1/4 cup cream
- 2 tbsp ghee (clarified butter) or oil
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Heat ghee in a pan and sauté the onions until golden brown.
- Add ginger-garlic paste and cook for a minute.
- Stir in the tomato puree, turmeric, red chili, and coriander powder. Cook until the oil separates.
- Add the fenugreek leaves and cook for a few minutes.
- Whisk the yogurt and add it to the pan, stirring continuously.
- Gently add the paneer cubes and simmer for 5 minutes.
- Stir in the cream and garam masala. Cook for another 2-3 minutes.
- Garnish with fresh coriander leaves and serve hot.
