Kashmiri Methi Maaz (कश्मीरी मेथी माज़)
Kashmiri Methi Maaz is a traditional dish from the beautiful region of Kashmir, known for its rich and aromatic flavors. This dish features tender pieces of lamb cooked with fenugreek leaves and a blend of warm spices, creating a delightful and comforting meal.
Ingredients
- 500g lamb, cut into pieces
- 1 cup fresh fenugreek leaves (methi)
- 1 large onion, finely chopped
- 2 tomatoes, pureed
- 1/2 cup yogurt
- 2 tbsp ghee (clarified butter)
- 1 cinnamon stick
- 4-5 green cardamom pods
- 1 tsp cumin seeds
- 1 tsp ginger-garlic paste
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp fennel powder
- 1 tsp garam masala
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Heat ghee in a heavy-bottomed pan and add cinnamon stick, green cardamom pods, and cumin seeds. Sauté until fragrant.
- Add chopped onions and cook until golden brown.
- Stir in ginger-garlic paste, turmeric powder, red chili powder, and fennel powder. Cook for a few minutes.
- Add the lamb pieces and cook until they are browned on all sides.
- Pour in the tomato puree and yogurt. Mix well and cook for 5 minutes.
- Add the fresh fenugreek leaves and salt. Cover the pan and simmer for 45-50 minutes, or until the lamb is tender.
- Sprinkle garam masala and garnish with fresh coriander leaves before serving.
