Kashmiri Methi Maaz (कश्मीरी मेथी माज़)

Ingredients

  • 500g lamb, cut into pieces
  • 1 cup fresh fenugreek leaves (methi)
  • 1 large onion, finely chopped
  • 2 tomatoes, pureed
  • 1/2 cup yogurt
  • 2 tbsp ghee (clarified butter)
  • 1 cinnamon stick
  • 4-5 green cardamom pods
  • 1 tsp cumin seeds
  • 1 tsp ginger-garlic paste
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp fennel powder
  • 1 tsp garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat ghee in a heavy-bottomed pan and add cinnamon stick, green cardamom pods, and cumin seeds. Sauté until fragrant.
  2. Add chopped onions and cook until golden brown.
  3. Stir in ginger-garlic paste, turmeric powder, red chili powder, and fennel powder. Cook for a few minutes.
  4. Add the lamb pieces and cook until they are browned on all sides.
  5. Pour in the tomato puree and yogurt. Mix well and cook for 5 minutes.
  6. Add the fresh fenugreek leaves and salt. Cover the pan and simmer for 45-50 minutes, or until the lamb is tender.
  7. Sprinkle garam masala and garnish with fresh coriander leaves before serving.
