Kashmiri Mushroom Masala (कश्मीरी मशरूम मसाला)

Ingredients

  • 500g mushrooms, sliced
  • 2 onions, finely chopped
  • 2 tomatoes, pureed
  • 1/2 cup yogurt
  • 2 tsp ginger-garlic paste
  • 1 tsp cumin seeds
  • 1 tsp fennel seeds
  • 1 tsp turmeric powder
  • 1 tsp Kashmiri red chili powder
  • 1 tsp garam masala
  • 2 tbsp oil
  • Fresh coriander leaves for garnish
  • Salt to taste

Instructions

  1. Heat oil in a pan and add cumin seeds and fennel seeds. Let them splutter.
  2. Add chopped onions and sauté until golden brown.
  3. Stir in ginger-garlic paste and cook for 2 minutes.
  4. Add turmeric powder, Kashmiri red chili powder, and tomato puree. Cook until the oil separates.
  5. Whisk the yogurt and add it to the pan. Cook for 5 minutes.
  6. Add sliced mushrooms, garam masala, and salt. Mix well and cook for 10-12 minutes.
  7. Garnish with fresh coriander leaves and serve hot with rice or naan.
