Kashmiri Rogan Josh

Ingredients

  • 1 kg lamb, cut into pieces
  • 3 tbsp ghee
  • 2 onions, finely chopped
  • 4 garlic cloves, minced
  • 1-inch ginger, grated
  • 2 tomatoes, pureed
  • 1/2 cup yogurt
  • 2 tsp coriander powder
  • 1 tsp cumin powder
  • 1/2 tsp turmeric
  • 1/2 tsp Kashmiri red chili powder
  • 1/2 tsp fennel powder
  • 1/4 tsp cinnamon powder
  • 4-5 green cardamom pods
  • 1/2 tsp garam masala
  • Salt to taste
  • 2 cups water
  • Fresh coriander leaves for garnish

Instructions

  1. Heat ghee in a heavy-bottomed pan and sauté the onions until golden brown.
  2. Add the minced garlic and grated ginger, and cook for a few minutes.
  3. Stir in the lamb pieces and cook until they are browned on all sides.
  4. Next, add the tomato puree, yogurt, and all the spices. Mix well to coat the lamb.
  5. Pour in the water, cover the pan, and simmer for 1.5 to 2 hours, or until the lamb is tender.
  6. Sprinkle garam masala and garnish with fresh coriander leaves before serving.
