Kashmiri Rogan Josh
Kashmiri Rogan Josh is a traditional North Indian dish known for its rich and aromatic flavors. This slow-cooked lamb curry is a staple in Kashmiri cuisine and is often enjoyed with steamed rice or naan.
Ingredients
- 1 kg lamb, cut into pieces
- 3 tbsp ghee
- 2 onions, finely chopped
- 4 garlic cloves, minced
- 1-inch ginger, grated
- 2 tomatoes, pureed
- 1/2 cup yogurt
- 2 tsp coriander powder
- 1 tsp cumin powder
- 1/2 tsp turmeric
- 1/2 tsp Kashmiri red chili powder
- 1/2 tsp fennel powder
- 1/4 tsp cinnamon powder
- 4-5 green cardamom pods
- 1/2 tsp garam masala
- Salt to taste
- 2 cups water
- Fresh coriander leaves for garnish
Instructions
- Heat ghee in a heavy-bottomed pan and sauté the onions until golden brown.
- Add the minced garlic and grated ginger, and cook for a few minutes.
- Stir in the lamb pieces and cook until they are browned on all sides.
- Next, add the tomato puree, yogurt, and all the spices. Mix well to coat the lamb.
- Pour in the water, cover the pan, and simmer for 1.5 to 2 hours, or until the lamb is tender.
- Sprinkle garam masala and garnish with fresh coriander leaves before serving.
