Kashmiri Saag (कश्मीरी साग)

Ingredients

  • 500g mixed leafy greens (spinach, mustard greens, collard greens)
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 green chilies, chopped
  • 1 tsp ginger-garlic paste
  • 1/2 tsp turmeric powder
  • 1 tsp cumin seeds
  • 1/2 tsp garam masala
  • 2 tbsp ghee (clarified butter) or oil
  • Salt to taste

Instructions

  1. Wash the mixed leafy greens thoroughly and chop them.
  2. Heat ghee or oil in a pan and add cumin seeds. Once they splutter, add chopped onions and green chilies. Sauté until the onions are golden brown.
  3. Add ginger-garlic paste and sauté for a minute. Then, add diced tomatoes and cook until they turn soft.
  4. Now, add turmeric powder, garam masala, and salt. Mix well.
  5. Add the chopped leafy greens and cook until they wilt and the moisture evaporates.
  6. Simmer for a few minutes, then remove from heat.
  7. Your Kashmiri Saag is ready to be served hot with steamed rice or naan.
