Katong Laksa Adventure

Ingredients

  • 400g rice vermicelli noodles
  • 300g shrimp, peeled and deveined
  • 200g fish cake, sliced
  • 100g cockles, boiled and shelled
  • 4 cups coconut milk
  • 4 cups chicken stock
  • 4 stalks lemongrass, bruised
  • 6 kaffir lime leaves
  • 4 tbsp laksa paste
  • 4 tbsp vegetable oil
  • 4 hard-boiled eggs, halved
  • 1 cup bean sprouts
  • 1 cup laksa leaves, chopped
  • 4 tbsp sambal chili paste

Instructions

  1. Soak the rice vermicelli noodles in hot water until softened, then drain and set aside.
  2. In a large pot, heat the vegetable oil over medium heat. Add the laksa paste and cook until fragrant.
  3. Pour in the coconut milk and chicken stock, then add the lemongrass and kaffir lime leaves. Simmer for 15 minutes.
  4. Add the shrimp, fish cake, and cockles. Cook for another 5 minutes until the seafood is cooked through.
  5. Divide the rice vermicelli noodles among 4 serving bowls. Ladle the laksa soup over the noodles.
  6. Garnish with hard-boiled eggs, bean sprouts, laksa leaves, and a dollop of sambal chili paste.
