Ingredients
- 400g rice vermicelli noodles
- 300g shrimp, peeled and deveined
- 200g fish cake, sliced
- 100g cockles, boiled and shelled
- 4 cups coconut milk
- 4 cups chicken stock
- 4 stalks lemongrass, bruised
- 6 kaffir lime leaves
- 4 tbsp laksa paste
- 4 tbsp vegetable oil
- 4 hard-boiled eggs, halved
- 1 cup bean sprouts
- 1 cup laksa leaves, chopped
- 4 tbsp sambal chili paste
Instructions
- Soak the rice vermicelli noodles in hot water until softened, then drain and set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the laksa paste and cook until fragrant.
- Pour in the coconut milk and chicken stock, then add the lemongrass and kaffir lime leaves. Simmer for 15 minutes.
- Add the shrimp, fish cake, and cockles. Cook for another 5 minutes until the seafood is cooked through.
- Divide the rice vermicelli noodles among 4 serving bowls. Ladle the laksa soup over the noodles.
- Garnish with hard-boiled eggs, bean sprouts, laksa leaves, and a dollop of sambal chili paste.
