Ingredients

  • 2 cups taro, peeled and diced
  • 1 can (14 oz) coconut milk
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 4 eggs

Instructions

  1. In a pot, combine the diced taro and coconut milk. Cook over medium heat until the taro is tender, about 15 minutes. Mash the taro with a fork and let the mixture cool slightly.
  2. Preheat the oven to 350°F (175°C). Grease a baking dish.
  3. In a bowl, whisk together the sugar, salt, vanilla extract, and eggs. Gradually add the taro and coconut milk mixture, stirring until well combined.
  4. Pour the mixture into the greased baking dish. Place the dish in a larger roasting pan and fill the pan with hot water to create a water bath.
  5. Bake for 30-35 minutes, or until the custard is set and the top is golden brown.
  6. Remove from the oven and let it cool. Refrigerate for at least 2 hours before serving.
