Ingredients
- 2 cups taro, peeled and diced
- 1 can (14 oz) coconut milk
- 1/2 cup sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 4 eggs
Instructions
- In a pot, combine the diced taro and coconut milk. Cook over medium heat until the taro is tender, about 15 minutes. Mash the taro with a fork and let the mixture cool slightly.
- Preheat the oven to 350°F (175°C). Grease a baking dish.
- In a bowl, whisk together the sugar, salt, vanilla extract, and eggs. Gradually add the taro and coconut milk mixture, stirring until well combined.
- Pour the mixture into the greased baking dish. Place the dish in a larger roasting pan and fill the pan with hot water to create a water bath.
- Bake for 30-35 minutes, or until the custard is set and the top is golden brown.
- Remove from the oven and let it cool. Refrigerate for at least 2 hours before serving.
