Ingredients
- 2 cups cassava, peeled and diced
- 1 cup coconut milk
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red chili, chopped
- 4 cups vegetable broth
- Salt and pepper to taste
Instructions
- In a large pot, heat the coconut milk over medium heat.
- Add the chopped onion, minced garlic, and red chili. Sauté until the onion is soft and translucent.
- Add the diced cassava and vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer for 30 minutes, or until the cassava is tender.
- Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth.
- Season with salt and pepper to taste.
