Ingredients

  • 2 cups cassava, peeled and diced
  • 1 cup coconut milk

  • 4 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the coconut milk over medium heat.
  2. Add the chopped onion, minced garlic, and red chili. Sauté until the onion is soft and translucent.
  3. Add the diced cassava and vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer for 30 minutes, or until the cassava is tender.
