Ingredients
- 2 large sweet potatoes, peeled and cubed
- 2 cups fresh spinach, chopped
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 1 can (14 oz) coconut milk
- 2 tablespoons curry powder
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons cooking oil
Instructions
- Heat the cooking oil in a large pot over medium heat. Add the chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.
- Add the curry powder, turmeric, cumin, coriander, and paprika to the pot. Stir well to coat the onions and spices.
- Add the cubed sweet potatoes to the pot and stir to combine with the spices.
- Pour in the coconut milk and bring the curry to a gentle simmer. Cook for about 15-20 minutes, or until the sweet potatoes are tender.
- Add the chopped spinach to the pot and stir until wilted. Season with salt and pepper to taste.
- Simmer for an additional 5 minutes, then remove from heat.
- Serve the Kaukau na Spinach Kari hot with steamed rice or roti.
