Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 2 cups fresh spinach, chopped
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 1 can (14 oz) coconut milk
  • 2 tablespoons curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons cooking oil

Instructions

  1. Heat the cooking oil in a large pot over medium heat. Add the chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.
  2. Add the curry powder, turmeric, cumin, coriander, and paprika to the pot. Stir well to coat the onions and spices.
  3. Add the cubed sweet potatoes to the pot and stir to combine with the spices.
  4. Pour in the coconut milk and bring the curry to a gentle simmer. Cook for about 15-20 minutes, or until the sweet potatoes are tender.
  5. Add the chopped spinach to the pot and stir until wilted. Season with salt and pepper to taste.
  6. Simmer for an additional 5 minutes, then remove from heat.
