Ingredients
- 1 lb kava root, peeled and sliced
- 1 can (14 oz) coconut milk
- 2 cups water
- 1 onion, chopped
- 2 carrots, sliced
- 2 potatoes, diced
- 1 bell pepper, chopped
- 1 cup green beans, trimmed
- Salt and pepper to taste
Instructions
- In a large pot, combine the kava root, coconut milk, and water. Bring to a boil, then reduce heat and simmer for 30 minutes.
- Add the onion, carrots, and potatoes to the pot. Simmer for an additional 20 minutes.
- Stir in the bell pepper and green beans, and continue to simmer for 10 minutes, or until the vegetables are tender.
- Season with salt and pepper to taste.
