Ingredients
- 2 cans of tuna, drained and flaked
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 can of coconut milk
- 2 cups of fish or vegetable broth
- 1 tomato, diced
- 1 carrot, sliced
- 1 potato, diced
- 1 green chili, chopped (optional)
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, sauté the onion and garlic until fragrant.
- Add the tuna, coconut milk, and broth. Bring to a simmer.
- Add the tomato, carrot, potato, and green chili. Cook until the vegetables are tender.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh cilantro.
