Kawap, also known as spicy lamb skewers, is a popular street food in Xinjiang, China. These skewers are seasoned with a blend of spices and grilled to perfection, resulting in a flavorful and aromatic dish that is perfect for gatherings and barbecues.

Kawap (spicy Lamb Skewers)

Ingredients

  • 1 lb lamb, cut into cubes
  • 2 tbsp cumin powder
  • 2 tbsp chili powder
  • 1 tbsp Sichuan peppercorn powder
  • 1 tsp salt
  • 1/4 cup vegetable oil
  • 4 cloves garlic, minced
  • 1 onion, cut into chunks
  • 4 green bell peppers, cut into chunks
  • 4 bamboo skewers, soaked in water

Instructions

  1. In a bowl, mix the cumin powder, chili powder, Sichuan peppercorn powder, salt, vegetable oil, and minced garlic to create a marinade.
  2. Add the lamb cubes to the marinade and coat them evenly. Let the lamb marinate for at least 1 hour in the refrigerator.
  3. Thread the marinated lamb, onion chunks, and green bell pepper chunks onto the soaked bamboo skewers.
  4. Preheat the grill to medium-high heat and lightly oil the grate.
  5. Grill the skewers for about 10-15 minutes, turning occasionally, until the lamb is cooked to your desired doneness and has a charred exterior.
  6. Remove the skewers from the grill and let them rest for a few minutes before serving.
