Kawap (spicy Lamb Skewers)
Kawap, also known as spicy lamb skewers, is a popular street food in Xinjiang, China. These skewers are seasoned with a blend of spices and grilled to perfection, resulting in a flavorful and aromatic dish that is perfect for gatherings and barbecues.
Ingredients
- 1 lb lamb, cut into cubes
- 2 tbsp cumin powder
- 2 tbsp chili powder
- 1 tbsp Sichuan peppercorn powder
- 1 tsp salt
- 1/4 cup vegetable oil
- 4 cloves garlic, minced
- 1 onion, cut into chunks
- 4 green bell peppers, cut into chunks
- 4 bamboo skewers, soaked in water
Instructions
- In a bowl, mix the cumin powder, chili powder, Sichuan peppercorn powder, salt, vegetable oil, and minced garlic to create a marinade.
- Add the lamb cubes to the marinade and coat them evenly. Let the lamb marinate for at least 1 hour in the refrigerator.
- Thread the marinated lamb, onion chunks, and green bell pepper chunks onto the soaked bamboo skewers.
- Preheat the grill to medium-high heat and lightly oil the grate.
- Grill the skewers for about 10-15 minutes, turning occasionally, until the lamb is cooked to your desired doneness and has a charred exterior.
- Remove the skewers from the grill and let them rest for a few minutes before serving.
