Kawap (uyghur Spiced Lamb Ribs)

Ingredients

  • 2 lbs lamb ribs
  • 2 tbsp cumin
  • 2 tbsp coriander
  • 1 tbsp chili powder
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • Salt to taste
  • Black pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. In a small bowl, mix together the cumin, coriander, chili powder, garlic powder, onion powder, salt, and black pepper to create the spice blend.
  2. Rub the spice blend all over the lamb ribs, ensuring they are evenly coated. Let the ribs marinate for at least 1 hour, or overnight for best results.
  3. Preheat the grill to medium-high heat. Brush the grill grates with vegetable oil to prevent sticking.
  4. Place the marinated lamb ribs on the grill and cook for 15-20 minutes, turning occasionally, until the meat is cooked to your desired level of doneness.
  5. Remove the ribs from the grill and let them rest for a few minutes before serving.
