Kazakh Rice Pilaf (plov)

Ingredients

  • 1 lb (450g) lamb, cut into chunks
  • 2 cups (400g) long-grain rice
  • 1 large onion, thinly sliced
  • 3 carrots, julienned
  • 4 cups (1 liter) beef or lamb broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the lamb and cook until browned on all sides.
  2. Add the sliced onion and cook until softened, then add the julienned carrots and continue cooking for a few minutes.
  3. Stir in the rice, cumin, paprika, turmeric, salt, and pepper, and cook for 2-3 minutes.
  4. Pour in the beef or lamb broth and bring to a boil. Reduce the heat to low, cover, and simmer for 30-35 minutes, or until the rice is tender and the liquid is absorbed.
  5. Fluff the rice pilaf with a fork and let it rest for a few minutes before serving.
