Ingredients
- 1 lb (450g) lamb, cut into chunks
- 2 cups (400g) long-grain rice
- 1 large onion, thinly sliced
- 3 carrots, julienned
- 4 cups (1 liter) beef or lamb broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the lamb and cook until browned on all sides.
- Add the sliced onion and cook until softened, then add the julienned carrots and continue cooking for a few minutes.
- Stir in the rice, cumin, paprika, turmeric, salt, and pepper, and cook for 2-3 minutes.
- Pour in the beef or lamb broth and bring to a boil. Reduce the heat to low, cover, and simmer for 30-35 minutes, or until the rice is tender and the liquid is absorbed.
- Fluff the rice pilaf with a fork and let it rest for a few minutes before serving.
