Ingredients

  • 1 block of halloumi cheese, cut into cubes
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • Cherry tomatoes
  • Wooden skewers, soaked in water
  • Olive oil
  • Freshly ground black pepper
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the stovetop grill or a grill pan over medium heat.
  2. Thread the halloumi cubes, bell peppers, red onion, and cherry tomatoes onto the soaked wooden skewers, alternating the ingredients.
  3. Brush the skewers with olive oil and season with freshly ground black pepper.
  4. Place the skewers on the preheated grill and cook for 2-3 minutes on each side, or until the halloumi is golden brown and the vegetables are tender.
