Ingredients
- 2 cups basmati rice, rinsed and drained
- 500g lamb, cut into chunks
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 2 teaspoons ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon turmeric powder
- 1 cinnamon stick
- 4 cardamom pods
- 4 cups chicken broth
- 1/2 cup raisins
- 1/4 cup slivered almonds
- Salt and pepper to taste
- Fried shallots for garnish
Instructions
- In a large pot, heat some oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.
- Add the lamb chunks to the pot and cook until browned on all sides.
- Stir in the ground coriander, cumin, and turmeric, then add the cinnamon stick and cardamom pods.
- Pour in the chicken broth and bring to a boil. Once boiling, add the rinsed basmati rice, raisins, and slivered almonds.
- Reduce the heat to low, cover the pot, and let the rice simmer for 20-25 minutes, or until the liquid is absorbed and the rice is tender.
- Season with salt and pepper to taste, then fluff the rice with a fork.
- Transfer the Kebuli Rice Extravaganza to a serving platter and garnish with fried shallots.
