Ingredients

  • 2 cups basmati rice, rinsed and drained
  • 500g lamb, cut into chunks
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 2 teaspoons ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric powder
  • 1 cinnamon stick
  • 4 cardamom pods
  • 4 cups chicken broth
  • 1/2 cup raisins
  • 1/4 cup slivered almonds
  • Salt and pepper to taste
  • Fried shallots for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.
  2. Add the lamb chunks to the pot and cook until browned on all sides.
  3. Stir in the ground coriander, cumin, and turmeric, then add the cinnamon stick and cardamom pods.
  4. Pour in the chicken broth and bring to a boil. Once boiling, add the rinsed basmati rice, raisins, and slivered almonds.
  5. Reduce the heat to low, cover the pot, and let the rice simmer for 20-25 minutes, or until the liquid is absorbed and the rice is tender.
  6. Season with salt and pepper to taste, then fluff the rice with a fork.
