Ingredients
- 1 whole chicken, cut into pieces
- 2 onions, sliced
- 4 tomatoes, chopped
- 3 bell peppers, sliced
- 4 garlic cloves, minced
- 2 tablespoons tomato paste
- 1 tablespoon olive oil
- 1 teaspoon ground ginger
- 1 teaspoon ground coriander
- 1 teaspoon ground cloves
- 1 teaspoon ground nutmeg
- 1 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 bay leaves
- 1 cup chicken broth
Instructions
- In a large bowl, combine the chicken pieces, onions, tomatoes, bell peppers, garlic, tomato paste, olive oil, and all the spices. Mix well to coat the chicken evenly.
- Transfer the marinated chicken and vegetables to a large, heavy-bottomed pot. Add the bay leaves and pour in the chicken broth.
- Cover the pot and cook over low heat for 2 hours, stirring occasionally, until the chicken is tender and the flavors have melded together.
- Season with salt and pepper to taste before serving.
