Kedjenou (fish And Vegetable Stew)
Kedjenou is a traditional Malian stew that is slow-cooked to perfection, resulting in tender fish and flavorful vegetables. This dish is a staple in Malian cuisine and is perfect for a cozy family dinner or a special gathering.
Ingredients
- 4 fillets of white fish (such as tilapia or cod)
- 2 onions, sliced
- 4 tomatoes, chopped
- 2 bell peppers, sliced
- 4 cloves of garlic, minced
- 1 inch of ginger, grated
- 2 hot peppers, sliced (optional for heat)
- 1/4 cup vegetable oil
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 teaspoon paprika
- 1 cup chicken or fish broth
Instructions
- Season the fish fillets with salt, pepper, and paprika. Set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the onions, garlic, and ginger. Sauté until the onions are translucent.
- Add the tomatoes, bell peppers, and hot peppers (if using) to the pot. Cook for 5 minutes, stirring occasionally.
- Place the seasoned fish fillets on top of the vegetable mixture in the pot.
- Pour the chicken or fish broth over the fish and vegetables. Cover the pot and let it simmer on low heat for 45-50 minutes, or until the fish is cooked through and the vegetables are tender.
- Serve the Kedjenou hot with rice or crusty bread.
