Ingredients

  • 1 kg lamb, cut into pieces
  • 500g okra, trimmed
  • 2 onions, chopped
  • 3 tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 bay leaves
  • 1 tsp thyme
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 2 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. Season the lamb pieces with salt, pepper, and paprika.
  2. Heat some oil in a large pot and brown the lamb on all sides. Remove and set aside.
  3. In the same pot, sauté the onions, garlic, and ginger until fragrant.
  4. Add the tomatoes, bay leaves, thyme, and cayenne pepper. Cook for 5 minutes.
  5. Return the lamb to the pot and add the chicken broth. Cover and simmer for 45 minutes.
  6. Add the okra to the pot and cook for an additional 15 minutes, or until the okra is tender.
  7. Adjust the seasoning and serve hot.
