Kedjenou (lamb And Okra Stew)
Kedjenou is a traditional Malian stew made with lamb and okra, cooked in a rich and flavorful sauce.
Ingredients
- 1 kg lamb, cut into pieces
- 500g okra, trimmed
- 2 onions, chopped
- 3 tomatoes, chopped
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 2 bay leaves
- 1 tsp thyme
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 2 cups chicken broth
- Salt and pepper to taste
Instructions
- Season the lamb pieces with salt, pepper, and paprika.
- Heat some oil in a large pot and brown the lamb on all sides. Remove and set aside.
- In the same pot, sauté the onions, garlic, and ginger until fragrant.
- Add the tomatoes, bay leaves, thyme, and cayenne pepper. Cook for 5 minutes.
- Return the lamb to the pot and add the chicken broth. Cover and simmer for 45 minutes.
- Add the okra to the pot and cook for an additional 15 minutes, or until the okra is tender.
- Adjust the seasoning and serve hot.
