Ingredients

  • 1 lb ground lamb
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup chicken broth
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a large bowl, mix the ground lamb, onion, garlic, parsley, cumin, paprika, cayenne pepper, salt, and pepper. Form the mixture into small meatballs.
  2. Heat the olive oil in a large tagine or skillet over medium heat. Brown the meatballs on all sides, then remove from the tagine and set aside.
  3. Add the sliced bell peppers to the tagine and cook until they begin to soften.
  4. Pour in the diced tomatoes and chicken broth. Season with salt and pepper, then bring to a simmer.
  5. Return the meatballs to the tagine, cover, and let simmer for 30 minutes, or until the meatballs are cooked through and the sauce has thickened.
  6. Sprinkle with fresh cilantro before serving.
