Ingredients
- 1 lb ground lamb
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 tsp ground cumin
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 can (14 oz) diced tomatoes
- 1/2 cup chicken broth
- 1/4 cup fresh cilantro, chopped
Instructions
- In a large bowl, mix the ground lamb, onion, garlic, parsley, cumin, paprika, cayenne pepper, salt, and pepper. Form the mixture into small meatballs.
- Heat the olive oil in a large tagine or skillet over medium heat. Brown the meatballs on all sides, then remove from the tagine and set aside.
- Add the sliced bell peppers to the tagine and cook until they begin to soften.
- Pour in the diced tomatoes and chicken broth. Season with salt and pepper, then bring to a simmer.
- Return the meatballs to the tagine, cover, and let simmer for 30 minutes, or until the meatballs are cooked through and the sauce has thickened.
- Sprinkle with fresh cilantro before serving.
