Ingredients

  • 1 lb lamb or beef head meat, cut into pieces
  • 6 cups water
  • 2 cups plain yogurt
  • 2 eggs
  • 1 tablespoon cornstarch
  • 1 teaspoon dried mint
  • 1 teaspoon turmeric
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring the meat and water to a boil. Reduce heat, cover, and simmer for 1.5 hours until the meat is tender.
  2. In a bowl, whisk together the yogurt, eggs, and cornstarch until smooth.
  3. Gradually add a ladle of the hot broth to the yogurt mixture, whisking constantly to temper the yogurt.
  4. Pour the yogurt mixture into the pot with the meat, stirring constantly over low heat for 10 minutes.
  5. Stir in the dried mint, turmeric, salt, and pepper. Simmer for an additional 10 minutes, stirring occasionally.
  6. Adjust seasoning to taste and serve hot.
