Kelle Pacha (kurdish Yogurt Soup)
Kelle Pacha is a traditional Kurdish yogurt soup that is both comforting and nutritious. This hearty soup is made with yogurt, meat, and fragrant spices, making it a popular dish in Kurdish cuisine.
Ingredients
- 1 lb lamb or beef head meat, cut into pieces
- 6 cups water
- 2 cups plain yogurt
- 2 eggs
- 1 tablespoon cornstarch
- 1 teaspoon dried mint
- 1 teaspoon turmeric
- Salt and pepper to taste
Instructions
- In a large pot, bring the meat and water to a boil. Reduce heat, cover, and simmer for 1.5 hours until the meat is tender.
- In a bowl, whisk together the yogurt, eggs, and cornstarch until smooth.
- Gradually add a ladle of the hot broth to the yogurt mixture, whisking constantly to temper the yogurt.
- Pour the yogurt mixture into the pot with the meat, stirring constantly over low heat for 10 minutes.
- Stir in the dried mint, turmeric, salt, and pepper. Simmer for an additional 10 minutes, stirring occasionally.
- Adjust seasoning to taste and serve hot.
