Keningau Bamboo Chicken
Keningau Bamboo Chicken is a traditional dish from the Sabahan Cuisine, which is known for its unique flavors and cooking methods.
Ingredients
- 1 whole chicken, cut into pieces
- 1 cup bamboo shoots, sliced
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 2 lemongrass stalks, bruised
- 4 kaffir lime leaves
- 1 teaspoon turmeric powder
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 cup coconut milk
- 1 cup water
Instructions
- In a large bowl, marinate the chicken pieces with turmeric powder and salt for 15 minutes.
- Heat some oil in a large pot over medium heat. Add the minced garlic, grated ginger, and bruised lemongrass. Sauté until fragrant.
- Add the marinated chicken pieces and cook until they are browned.
- Add the sliced bamboo shoots, kaffir lime leaves, and sugar. Stir well.
- Pour in the coconut milk and water. Cover the pot and let it simmer for 45 minutes.
- Remove the lid and let it cook for another 15 minutes until the sauce thickens.
- Serve the Keningau Bamboo Chicken hot with steamed rice.
