Kenyan Beef Samosa Surprise

Ingredients

  • 1 lb ground beef
  • 2 large potatoes, diced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/2 tsp cayenne pepper
  • Salt to taste
  • Pepper to taste
  • 2 tbsp vegetable oil
  • 12 samosa wrappers
  • Oil for frying

Instructions

  1. In a large pan, heat the vegetable oil over medium heat. Add the onions and garlic, and sauté until translucent.
  2. Add the ground beef to the pan and cook until browned, breaking it up with a spoon as it cooks.
  3. Stir in the diced potatoes, ground cumin, ground coriander, turmeric, cayenne pepper, salt, and pepper. Cook for 10-15 minutes until the potatoes are tender.
  4. Remove the pan from the heat and let the mixture cool slightly.
  5. Take a samosa wrapper and place a spoonful of the beef and potato mixture in the center. Fold the wrapper into a triangle, sealing the edges with a little water.
  6. Heat oil in a deep pan for frying. Fry the samosas in batches until golden brown and crispy.
  7. Remove the samosas from the oil and drain on paper towels.
