Kenyan Bhajia Burgers

Ingredients

  • 4 burger buns
  • 1 cup chickpea flour
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon baking powder
  • 1/2 cup water
  • 4 large potatoes, peeled and sliced into rounds
  • 1 cup vegetable oil for frying
  • 1 tomato, sliced
  • 1 onion, sliced
  • Lettuce leaves
  • 1/2 cup plain yogurt (or plant-based yogurt for vegan option)
  • Salt to taste

Instructions

  1. In a bowl, mix chickpea flour, cumin, coriander, turmeric, chili powder, baking powder, and salt. Gradually add water to form a smooth batter.
  2. Heat vegetable oil in a pan. Dip potato slices in the batter and fry until golden brown. Remove and drain on paper towels.
  3. Toast the burger buns until golden brown.
  4. Assemble the burgers by spreading yogurt on the bottom half of each bun, then layering with lettuce, tomato, onion, and the bhajia. Top with the other half of the bun.
