Ingredients
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 cup water
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1 teaspoon curry powder
- 1 cup cooked vegetables (e.g., peas, carrots, potatoes)
- 1/2 cup fresh cilantro, chopped
Instructions
- In a large bowl, mix the flour and salt. Gradually add water and knead the dough until smooth. Divide the dough into 8 equal portions and shape into balls.
- Roll out each ball into a thin circle. Brush with oil and sprinkle with flour. Roll up the circle into a long rope, then coil the rope into a spiral. Repeat with the remaining balls.
- Heat a skillet over medium heat. Cook each chapati spiral until golden brown and flaky, about 2 minutes per side. Remove from the skillet and set aside.
- In the same skillet, heat 1 tablespoon of oil. Add the chopped onion and sauté until translucent. Add the diced tomatoes, curry powder, and cooked vegetables. Cook for 5 minutes, then stir in the chopped cilantro.
- To assemble the chapati rolls, place a spoonful of the vegetable filling in the center of each chapati spiral. Roll up and secure with a toothpick if needed.
