Kenyan Chicken Curry Delight

Ingredients

  • 1 kg chicken, cut into pieces
  • 2 onions, finely chopped
  • 3 tomatoes, blended
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tbsp curry powder
  • 1 tsp turmeric powder
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp chili powder
  • 1 cup coconut milk
  • 2 tbsp vegetable oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat vegetable oil in a large pot over medium heat.
  2. Add the chopped onions and sauté until golden brown.
  3. Add the minced garlic and grated ginger, and cook for 2 minutes.
  4. Add the chicken pieces and cook until they are browned on all sides.
  5. Stir in the curry powder, turmeric powder, cumin seeds, coriander powder, and chili powder. Cook for 2 minutes.
  6. Pour in the blended tomatoes and simmer for 10 minutes.
  7. Add the coconut milk and season with salt. Simmer for another 20 minutes until the chicken is tender and the sauce has thickened.
  8. Garnish with fresh coriander leaves before serving.
