Kenyan Chicken Curry Delight

Ingredients
- 1 kg chicken, cut into pieces
- 2 onions, finely chopped
- 3 tomatoes, blended
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 2 tbsp curry powder
- 1 tsp turmeric powder
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp chili powder
- 1 cup coconut milk
- 2 tbsp vegetable oil
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Heat vegetable oil in a large pot over medium heat.
- Add the chopped onions and sauté until golden brown.
- Add the minced garlic and grated ginger, and cook for 2 minutes.
- Add the chicken pieces and cook until they are browned on all sides.
- Stir in the curry powder, turmeric powder, cumin seeds, coriander powder, and chili powder. Cook for 2 minutes.
- Pour in the blended tomatoes and simmer for 10 minutes.
- Add the coconut milk and season with salt. Simmer for another 20 minutes until the chicken is tender and the sauce has thickened.
- Garnish with fresh coriander leaves before serving.
