Kenyan Coconut Rice Bliss

Ingredients

  • 2 cups basmati rice
  • 1 can (13.5 oz) coconut milk
  • 1 3/4 cups water
  • 1 teaspoon salt
  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh cilantro (optional for garnish)

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until softened, about 3-4 minutes.
  2. Add the minced garlic, ground turmeric, ground cumin, and black pepper to the pot. Cook for an additional 1-2 minutes, stirring constantly to toast the spices.
  3. Stir in the basmati rice and cook for 1-2 minutes to lightly toast the rice.
  4. Pour in the coconut milk and water, then add the salt. Stir well to combine.
  5. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
