Ingredients
- 2 cups basmati rice
- 1 can (13.5 oz) coconut milk
- 1 3/4 cups water
- 1 teaspoon salt
- 1 tablespoon vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground turmeric
- 1/2 teaspoon ground cumin
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh cilantro (optional for garnish)
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until softened, about 3-4 minutes.
- Add the minced garlic, ground turmeric, ground cumin, and black pepper to the pot. Cook for an additional 1-2 minutes, stirring constantly to toast the spices.
- Stir in the basmati rice and cook for 1-2 minutes to lightly toast the rice.
- Pour in the coconut milk and water, then add the salt. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
- Fluff the rice with a fork and garnish with chopped cilantro, if desired, before serving.
