Kenyan Matoke Pancakes

Ingredients

  • 2 ripe plantains, mashed
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup sugar
  • 1 cup milk
  • 1 egg
  • 2 tablespoons melted butter

Instructions

  1. In a bowl, mix together the mashed plantains, flour, baking powder, salt, cinnamon, and sugar.
  2. In a separate bowl, whisk together the milk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Heat a non-stick pan over medium heat and lightly grease with butter or oil.
  5. Pour 1/4 cup of the batter onto the pan and cook until bubbles form on the surface, then flip and cook the other side until golden brown.
  6. Repeat with the remaining batter.
  7. Serve the matoke pancakes warm with your favorite toppings.
