Ingredients
- 2 ripe plantains, mashed
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 1/4 cup sugar
- 1 cup milk
- 1 egg
- 2 tablespoons melted butter
Instructions
- In a bowl, mix together the mashed plantains, flour, baking powder, salt, cinnamon, and sugar.
- In a separate bowl, whisk together the milk, egg, and melted butter.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Heat a non-stick pan over medium heat and lightly grease with butter or oil.
- Pour 1/4 cup of the batter onto the pan and cook until bubbles form on the surface, then flip and cook the other side until golden brown.
- Repeat with the remaining batter.
- Serve the matoke pancakes warm with your favorite toppings.
