Kenyan Roasted Goat Delicacy

Ingredients

  • 2 lbs goat meat, cut into pieces
  • 2 onions, chopped
  • 4 tomatoes, diced
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tbsp vegetable oil
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 cups water

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the chopped onions, minced garlic, and grated ginger. Sauté until the onions are soft and translucent.
  3. Add the goat meat pieces to the pot and brown on all sides.
  4. Stir in the diced tomatoes, turmeric, cumin, coriander, paprika, salt, and pepper.
  5. Pour in the water and bring the mixture to a boil. Reduce the heat, cover, and simmer for 2 hours or until the goat meat is tender.
  6. Once the meat is tender, uncover the pot and allow the liquid to reduce to a thick sauce.
  7. Adjust the seasoning if needed and serve the roasted goat hot with your favorite side dishes.
