Kenyan Samosa Pie

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup butter, melted
  • 1/2 cup water
  • 1 cup cooked potatoes, mashed
  • 1 cup cooked peas
  • 1/2 cup diced carrots
  • 1 teaspoon cumin seeds
  • 1 teaspoon garam masala
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup vegetable oil

Instructions

  1. In a large bowl, mix the flour and melted butter. Gradually add water and knead the dough until smooth. Cover and let it rest for 30 minutes.
  2. In a separate bowl, mix the mashed potatoes, peas, carrots, cumin seeds, garam masala, chili powder, salt, and cilantro to make the filling.
  3. Preheat the oven to 375°F (190°C).
  4. Divide the dough into two equal parts. Roll out one part to fit the bottom of a pie dish. Place the rolled dough in the dish.
  5. Spread the filling evenly over the dough in the pie dish.
  6. Roll out the remaining dough and place it over the filling to cover the pie. Seal the edges and make small slits on the top crust for steam to escape.
  7. Bake in the preheated oven for 45 minutes, or until the crust is golden brown.
  8. Remove from the oven and let it cool for a few minutes before slicing and serving.
