Ingredients
- 2 cups all-purpose flour
- 1/4 cup vegetable oil
- 1 teaspoon salt
- 1 cup boiled and mashed potatoes
- 1/2 cup green peas
- 1/4 cup finely chopped onion
- 1 teaspoon minced ginger
- 1 teaspoon minced garlic
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/2 teaspoon cayenne pepper
- 1/4 cup chopped fresh cilantro
- Oil for frying
Instructions
- In a large bowl, mix the flour, oil, and salt. Gradually add water and knead the dough until smooth. Cover and let it rest for 30 minutes.
- In a pan, heat some oil and sauté the onion, ginger, and garlic until fragrant. Add the green peas, mashed potatoes, and spices. Cook for 5 minutes, then stir in the cilantro. Remove from heat and let the filling cool.
- Divide the dough into 6 equal portions and roll each into a 6-inch circle. Cut each circle in half to form semi-circles.
- Take one semi-circle, form a cone, and seal the edges with water. Fill the cone with the potato mixture and seal the top. Repeat for the remaining dough and filling.
- Heat oil in a pan and fry the samosas until golden brown. Drain on paper towels and serve hot.
