Kenyan Sausage (mutura Madness)

Ingredients

  • 1 lb ground beef
  • 1 lb ground pork
  • 1/2 cup chopped onions
  • 2 tbsp chopped fresh cilantro
  • 1 tbsp grated ginger
  • 1 tbsp curry powder
  • 1 tsp cayenne pepper
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup beef broth
  • Beef casings or sausage casings

Instructions

  1. In a large mixing bowl, combine the ground beef, ground pork, onions, cilantro, ginger, curry powder, cayenne pepper, cumin, coriander, salt, and black pepper. Mix well to combine.
  2. Add the beef broth to the meat mixture and mix until well incorporated.
  3. Stuff the meat mixture into the beef casings or sausage casings, twisting the casings at regular intervals to form individual sausages.
  4. Preheat the grill to medium-high heat and grill the sausages for about 15-20 minutes, turning occasionally, until they are cooked through and have a nice char on the outside.
  5. Remove the sausages from the grill and let them rest for a few minutes before slicing and serving.
