Kenyan Sukuma Wiki Frittata

Kenyan Sukuma Wiki Frittata

Ingredients

  • 6 eggs
  • 1 bunch of sukuma wiki, chopped
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a non-stick pan over medium heat.
  2. Add the onions and cook until translucent.
  3. Add the tomatoes and sukuma wiki, and cook until the vegetables are tender.
  4. In a bowl, beat the eggs and season with salt and pepper.
  5. Pour the beaten eggs over the cooked vegetables in the pan.
  6. Cover and cook for about 5-7 minutes, or until the eggs are set.
  7. Slide the frittata onto a plate, slice, and serve.
