Kenyan Sukuma Wiki Frittata
Sukuma wiki, a popular Kenyan vegetable, is often cooked with onions and tomatoes. In this recipe, we're giving it a twist by turning it into a delicious frittata.
Ingredients
- 6 eggs
- 1 bunch of sukuma wiki, chopped
- 1 onion, chopped
- 2 tomatoes, chopped
- 1 tablespoon vegetable oil
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a non-stick pan over medium heat.
- Add the onions and cook until translucent.
- Add the tomatoes and sukuma wiki, and cook until the vegetables are tender.
- In a bowl, beat the eggs and season with salt and pepper.
- Pour the beaten eggs over the cooked vegetables in the pan.
- Cover and cook for about 5-7 minutes, or until the eggs are set.
- Slide the frittata onto a plate, slice, and serve.
